Adair Wines is a one-woman operation based in Mudgee, NSW, making natural wine the slow, honest way. I hand-pick grapes from local vineyards and work with nothing but native yeasts, minimal sulphites, and a deep respect for the fruit. No oak, no shortcuts—aged in glass demijohns and stainless steel, in the spirit of traditional Italian winemaking.
We’re totally off-grid at Adair Wine. The farm runs on solar power and spring water, handmade from the ground up. The result: bright, fresh and fruity wines; old-world character under the new-world sun.
